					<description>I think you are spot on with this. I like to think of it as the 'brewing' or 'distilling' time.  A good vintage is spoiled by rushing it.  Sometimes you have to wait for other ingredients to appear and be added to the mash. At others it is a case of waiting for the existing ingredients to mix until they reach the precise flavour you want. In the mean time you can work on another project.</description>
